The True TSSU-72-16-HC food prep table features a self-contained refrigeration system with an eco-friendly R290 hydrocarbon refrigerant. It maintains precise temperatures between 33 and 41 degrees Fahrenheit using patented forced-air technology, ensuring uniform temperatures throughout the food pan and cabinet interior. The unit's sealed, self-lubricating evaporator fan motors and large fan blades create efficient airflow. The condensing unit is accessible from the back for easy maintenance. Upon startup, the fan motors reverse for 20 seconds to remove debris from the coils, promoting efficient operation and energy conservation. However, regular maintenance and cleaning are still necessary.
This prep table includes a 113⁄4-inch-deep cutting board, perfect for sandwich and salad preparation. The white polyethylene cutting board is removable for easy cleaning and sanitation. The top ingredient compartment accommodates a total of 16 food pans: eight in each of the two rows, and this unit comes with a full set of 4-inch deep, clear polycarbonate pans. The cabinet base features six PVC-coated wire shelves for customizable ingredient storage. The swinging doors are self-closing and can stay open past 90 degrees for convenient loading and unloading.
